Once prepared the cheek is called a plum. We are so pleased they are back on some restaurant menus because they are perhaps the most perfect braising dish. A simply wonderful flavour and texture. A real treat for any occasion.
Fresh pork cheek plumbs are the leaner, muscular part of a pig’s cheek that can be slow-cooked or braised until tender. They are a flavorful cut of meat that absorbs sauces and seasonings well.

Preparation
Sear the cheeks and set aside
Create a mirepoix
Top with cider and chicken stock
Slow cook in the oven at 160°C until the cheeks are tender
Season to taste with salt and pepper
Uses
In Spanish cooking, often cooked with lots of smoky paprika and sherry
In Italian cooking, a key ingredient in meals like carbonara and amatriciana
